AKRAM, Chalus, Northern Iran

“I hope when you eat my traditional food, you can feel my heart, my love, and my home.

To Akram, food is everything. Her dad’s family are from Chalus, a small city in the north of Iran where the mountains meet the sea and the land is green and fertile. Here, sour pomegranate trees dot the landscape and women harvest herbs, sharing the fruits of their labour in markets, like a rug of fresh produce. Married young, cooking started as a way for Akram to connect with her community, learning from TV and encouraged by her lovely (and honest!) neighbour. It wasn’t long before she was writing recipes for magazines with her signature Persian style rice, vibrantly yellow and garnished with saffron and butter. An incredibly inspiring woman, Akram went on to host her own cooking show segment and run a food production factory employing 15 women in Iran! With her culture shining proudly in everything she does, Akram uses food as a language, a sensorial tool for her to intimately understand and share with all the people she meets. ` Her cooking is truly a portal to her soul, inviting you to taste, smell and feel like you’re part of her homeland. Like Akram says, “if you can taste my food, you can touch my heart.”
