POL ROTI

Pol means coconut in Sinhalese. Pol Roti is a quick and easy coconut flatbread! In Sri Lanka this dish is very famous, it’s on every street corner as is fresh coconut! Nige makes many versions of roti but this recipe, with shallots and green chilli, is by far his favourite. It’s often used in breakfast dishes or as shorteats (Sri Lankan slang for snacks).

While you can omit the long green chillies in this one to make this recipe less spicy and kid friendly, Nige himself would never be satisfied with a dish if it did not contain some amount of spice. He was raised on chillies. For him, chilli adds a depth of flavour unmatched by any other ingredient.
