“Balancing flavour and texture and scent – adding a pinch of saffron or turmeric – it’s the same challenge you get on a canvas. That endless tug-of-war between light and shade, sweet and sour, colour and contrast. I think the base of everything is design,” Rana says.”

Raya’s menu is a journey through the heart of Persian cuisine — rich in herbs, bold flavours, and comforting textures. It opens with a refreshing Strawberry Sharbat, sweet and tangy, followed by Dooymaj, bites of feta, walnut and herbs. Her Ghormeh Sabzi is a soulful, slow-cooked beef stew, deeply aromatic and full of tradition. The Kashke Bademjan, a creamy eggplant dip, is tangy and smooth, while Kuku Sibzamini brings potato patties to the table. A fresh Sabzi Khordan herb platter (with Raya’s impressively carved radishes…) and juicy Shirazi salad add brightness. To finish, there's Fereni — a delicate rice custard. Raya’s menu secret ingredient is her headband that helps her get in the zone.
