IN THE KITCHEN WITH CHEF SHAHID BURNEY

With over 20 years of cooking experience we could learn a thing or three from Chef Shahid Burney! Naturally, we are thrilled he has offered to share with us some important life AND cooking related lessons. Today’s lesson is a universally important one: How to prevent food waste. Learn how to make the most of your leftovers with this tasty and hearty dish called “Shola”. A dish he learnt growing up from his mother and one he intends to pass on to his own children.

Take it away Chef Shahid Burney….

“My wish is that my kids not only love food but also learn to respect food” - Chef Shahid. Shola is a delicious and beautiful dish made traditionally from leftovers.

LOVE YOUR LEFTOVERS. COOK “SHOLA”

Food is precious, let’s respect it, let's not throw it away!

Wasting food is bad for the environment when we throw it into landfill it produces large amounts of methane. When it rots and degrades it produces some very harmful gasses like carbon dioxide.

Food waste and costs us a lot of money. We always say we love food but we actually throw away SO MUCH perfectly edible food!

Thinking before throwing edible food in the bin can result in some great ideas! For example, leftover vegetables can be used for your stock, which can then be used in different recipes. Vegetables are full of nutrients, vitamins and are low in fat and calories.

Today I am going to show you how my beloved mum cooked for us when there was no food at home. She would make ‘Shola’ using all different leftovers like pulses, rice and vegetables. Shola is a delicious and beautiful dish.

* Chef Burney has used fresh lentils and rice in this recipe for demonstration purposes but the real idea is to use leftover rice and lentils from your previous meal.
